Notes
* Most of the meat will be separated and frozen for a later day
* Reduced onion amount is intentional for a milder flavor and easier digestion.

Gyro meat
1 lbground lamb
1 lbground turkey
0.5onion
large, finely grated and squeezed dry

1 x 5.3 ozplain lactose-free Greek yogurt
1 ½ Tbspolive oil
½ Tbsplemon juice

Lactose-Free Tzatziki Sauce
1 x 5.3 ozplain lactose-free Greek yogurt
1English cucumber
partially peeled in stripes and grated
½ tspkosher salt

1 tspminced garlic
1 tspwhite vinegar
1 Tbspextra virgin olive oil
1 Tbspfreeze-dried dill
¼ tspground black pepper

Instructions
Step 1
1. Preheat oven to 400°F.
Step 2
2. In a large bowl, combine ground lamb, ground turkey, grated onion, garlic, yogurt, olive oil, lemon juice (if using), and all spices.

3. Mix thoroughly until the mixture is evenly combined and slightly sticky.

4. Divide the meat mixture into four portions.
Step 5
5. Place one portion between two sheets of parchment paper and roll or press into a thin rectangle.

6. Starting from the long side, fold the parchment over the meat and roll tightly into a compact log. Repeat with remaining portions.

7. Place parchment-wrapped meat logs on a baking sheet and bake for 15 minutes.

8. Let cool slightly, unwrap, and slice thinly or break into small gyro-style pieces.

9. Add slices to a cast iron pan or broil to brown. At this step you can separate slices and roll extra up to freeze.
Lactose-Free Tzatziki Sauce
Step 10
Grate the cucumber and lightly salt it. Allow it to sit briefly, then squeeze out excess moisture.
Step 11
Combine cucumber, yogurt, garlic, vinegar, olive oil, dill, salt and pepper.
Step 12
Mix well and refrigerate before serving to allow flavors to develop.
