Sausage Tortellini Skillet
A one-pan sausage tortellini dinner with mushrooms, zucchini, and marinara. Simmer until tender, then top with Parmesan and mozzarella for a quick, hearty meal.

Ingredients
10 servings
1 poundturkey sausage
hot Italian, or chicken, casings removed
½ cuponion
small, chopped
8 ounceswhite mushrooms
sliced, roughly chopped if large
8 ounceszucchini
chopped
2garlic cloves
minced
1 jartomato basil sauce
or marinara spaghetti
½ cupwater
20 ouncescheese tortellini
refrigerated
1.5 ouncesParmesan
shredded
1 cupshredded reduced-fat mozzarella cheese
Instructions
Step 1
Place the sausage in a large skillet set over medium heat and cook for a few minutes, breaking into crumbles with a wooden spoon until it begins to brown, 3 to 5 minutes.
Step 2
Add the onion, mushrooms, zucchini and garlic and stir together. Cook, stirring often, until the sausage is cooked through and vegetables are softened, 8 to 10 minutes more.
Step 3
Add the sauce, water and tortellini, and stir until well combined.
Step 4
Cover the pan and increase the heat until it begins to bubble.
Step 5
Lower the heat and simmer, stirring occasionally, until the tortellini is tender, about 8 minutes.
Step 6
Turn off the burner, remove the lid and sprinkle the Parmesan and mozzarella over the top of the skillet.
Step 7
Place the lid back on the pan and let it sit for about 2 minutes, until the cheese is melted. Remove the lid and serve.
