Instructions
Step 1
Brown the turkey: Heat olive oil in a large oven-safe pan over medium-high heat. Add ground turkey and cook, breaking it up, for 6–8 minutes until browned through.
Step 2
Soften the veg: Add onion, bell pepper, and garlic to the pan and cook for 4–5 minutes until softened.
Step 3
Add sweet potato and simmer: Stir in the diced sweet potato, chopped tomatoes, smoked paprika, cumin, thyme, salt, and pepper. Cover and simmer on low for 20–25 minutes, stirring occasionally, until the sweet potato is fork-tender.
Step 4
Optional finish: Sprinkle grated cheese over the top and let it melt in, off the heat, for a few minutes.
Step 5
Cool and portion: Let cool completely, then divide into airtight containers.
