Lil Debbie has nothing on this recipe! A delicious oatmeal cookie with a buttercream frosting in the middle!! I would make the buttercream frosting first and let that set up in the refrigerator. Buttercream instructions are at the bottom!

Instructions

Step 1
If you’re using old-fashioned oats: I like to pulse them a few times in a blender or food processor. Don’t turn them into flour!! Just break them up a little so the cookies have that softer Little Debbie texture.
Step 2
Preheat oven to 350°F.
Step 3
Cream the softened butter, brown sugar and white sugar together for about 2–3 minutes until it’s nice and fluffy.
Step 4
Add the eggs one at a time and then the vanilla.
Step 5
In a separate bowl mix the flour, baking soda, salt and cinnamon. Slowly add the dry ingredients into the wet ingredients and mix just until everything comes together.
Step 6
Fold in the oats.
Step 7
Scoop about 1 1/2–2 tablespoons of dough for each cookie and put them on a parchment-lined baking sheet. Flatten them a little because you don’t want super thick cookies for these.
Step 8
Bake for about 9–11 minutes. DO NOT overbake them!! I take them out when the edges are set but the centers still look a tiny bit underdone. That’s what keeps them super soft.
Step 9
Let them cool completely before adding the filling.
Step 10
1. Beat the 115g softened butter and 115g softened cream cheese together for about 2–3 minutes until completely smooth and fluffy. 2. Slowly add 240–300g powdered sugar, a little at a time, and keep beating until everything is combined. 3. Add 1 1/2 tsp vanilla and a tiny pinch of salt. 4. Add 1–2 tbsp milk, but only a little at a time!! You want the buttercream thick and fluffy, not runny. 5. Beat everything for another 1–2 minutes until super creamy and fluffy. 6. Put a big scoop between two completely cooled oatmeal cookies and gently squish them together. 🤤
