Okay I KNOW cowboy caviar normally has beans in it and I personally do not want a bean anywhere near mine 😂 BUT apparently other people like them sooo I’m putting them in the recipe. I just leave them out of mine!!
This is sooo fresh and crunchy and honestly gets even better after it sits in the fridge for a little bit. Eat it with tortilla chips, put it on tacos, chicken, bowls… or literally just stand at the fridge eating it with a spoon lol.

Ingredients
12 servings
1can black beans
drained and rinsed, OPTIONAL because ew lol
1can black-eyed peas
drained and rinsed, also optional!!!)
1can corn
drained OR about 1/2 cups corn
3Roma tomatoes
diced
1red bell pepper
diced
1yellow bell pepper
or orange, diced
1jalapeño
diced really small
0.5red onion
diced
fresh cilantro
chopped
1avocado
diced, I add this right before eating so it doesn’t get gross
2juice of limes
2 Tbspolive oil
1 Tbspred wine vinegar
1 tspsugar
or honey
½ tspgarlic powder
½ tspcumin
Salt
pepper
chili powder
if you want some extra flavor
Instructions
Step 1
Dice up all your tomatoes, peppers, jalapeño and red onion pretty small. Chop up a TON of cilantro because I refuse to measure cilantro with my heart 😂.
Step 2
Throw everything into a giant bowl with the corn.
Step 3
If you’re a bean person: add your rinsed black beans and black-eyed peas here.
Step 4
In a little bowl mix together the lime juice, olive oil, red wine vinegar, sugar/honey, garlic powder, cumin, salt, pepper and chili powder.
Step 5
Pour it all over everything and toss it really well.
Step 6
Now taste it!!! This is where I usually decide it needs another squeeze of lime and probably more salt 😂.
Step 7
Put it in the fridge for at least 30 minutes before eating if you can wait. It gets sooo much better once everything sits together and gets all juicy.
Step 8
If you’re adding avocado, wait until you’re actually ready to eat it and gently mix it in at the end.
Step 9
Serve it COLD with tortilla chips and prepare to accidentally eat half the bowl standing at the counter
