Nicks FAVORITE pickled cucumber, tomato, and onion salad

8 steps
Prep:10minCook:15min
I could literally eat this straight out of the bowl lol. It’s cold, crunchy, tangy, a little sweet and SOOO good in the summer. Also one of those things that somehow tastes even better after sitting in the fridge and soaking everything up.

Instructions

Step 1
Slice your cucumbers and onions pretty thin and cut the tomatoes into chunks. Throw everything into a big bowl and set it aside.
Step 2
Now make the pickling liquid!!
Step 3
Add the white vinegar, apple cider vinegar, water, sugar and salt to a small saucepan.
Step 4
Heat it over medium heat, stirring until the sugar and salt are COMPLETELY dissolved. You don’t need to boil the crap out of it lol. Just get it nice and hot and stir until you can’t see any sugar sitting at the bottom anymore.
Step 5
Take it off the heat and stir in the black pepper, garlic powder, dill and red pepper flakes.
Step 6
NOW LET IT COOL!!! Do not pour boiling hot vinegar all over your cucumbers unless you want sad floppy cucumbers lol.
Step 7
Once the mixture has cooled down, pour it all over the cucumbers, tomatoes and onions.
Step 8
Toss everything really well, cover the bowl and put it in the fridge for at least an hour.
