Alabama-Style Hot Slaw
This is Jim Shahin's take on the spicy, mustard-based "hot slaw" served at Bunyan’s Bar-B-Q in Florence, Ala.

Ingredients
6 servings
0.5 headgreen cabbage
medium, cored and grated
1carrot
trimmed and scrubbed well, then grated
1sweet onion
small, grated
1green bell pepper
small, seeded and grated
⅓ cupprepared mustard
such as, brand
½ cupdistilled white vinegar
¼ cupdark brown sugar
packed
1 teaspoonsalt
½ teaspoonfreshly ground black pepper
1 teaspoonTabasco sauce
or other hot sauce, or more as needed
Instructions
Step 1
1 Toss together the cabbage, carrot, onion, bell pepper and mustard in a heatproof mixing bowl
Step 2
2 Combine the vinegar, dark brown sugar, salt, pepper and hot sauce in a small saucepan over medium heat; cook for about 3 minutes, stirring, until the sugar has dissolved and the mixture is thoroughly heated through
Step 3
3 Taste, and add more hot sauce, as needed
Step 4
4 Pour the heated dressing over the cabbage mixture and toss to incorporate
Step 5
5 Before serving, at room temperature or chilled, drain off some of the excess dressing
