Instructions

Step 1
Sauté: Turn your Instant Pot to Sauté to crisp up your diced bacon or warm your oil/butter.
Step 2
Layer: Pour in the 3/4 cup of chicken broth. Add the rinsed and drained beans to the bottom, nestle the frozen boneless, skinless chicken thighs right into the liquid and beans, and pack the entire bag of greens on top. Season with salt, pepper, and red pepper flakes.
Step 3
Pressure Cook: Secure the lid, make sure the valve is set to Sealing, and cook on High Pressure for 10 minutes (10 minutes is the sweet spot for frozen boneless thighs so they become tender enough to shred easily).
Step 4
Release: Let the pressure naturally release for 10 minutes, then release any remaining pressure.
Step 5
Shred & Mix: Transfer the cooked chicken thighs to a plate, shred them with two forks, and stir the meat back into the pot with the greens and beans. Taste for seasoning, and enjoy!
