Instructions

Step 1
Equipment: Grease a 33cm x 25cm shallow baking tin and fully line with baking paper.
Step 2
Preheat the oven to 180°C regular bake.
Step 3
Put the dates in a medium pot with the bananas, boiling water, golden syrup, vanilla, zest and the baking soda. Bring to the boil, stirring to combine, then cook for about 5 minutes over a medium heat until the dates have softened and are breaking down. Crush with a potato masher to make a thick paste. Set aside to cool.
Step 4
Whisk the eggs, oil, sugar and the milk together in a large bowl then whisk in the cooled date mixture.
Step 5
Combine the flour and spices, add to the bowl along with the walnuts and fold everything together until well combined, making sure there are no pockets of flour in the batter. Pour into the baking tin and spread evenly.
Step 6
Bake for 25 minutes or until a toothpick inserted into the centre comes out clean.
Step 7
To serve: Cut into squares and put on plates with a generous scoop of ice cream. Pour over the warm Salted Caramel Sauce.
