BEEF MARINADE
500gbeef steak
thinly sliced
2 Tbsplight soy sauce
1 Tbspdark soy sauce
1 Tbspoyster sauce
1 Tbspcornflour
1 Tbspgarlic paste
1 Tbspginger paste
STIR FRY SAUCE
250mlbeef stock
1 Tbsplight brown sugar
2 Tbspoyster sauce
2 Tbsplight soy sauce
1 Tbspdark soy sauce
1 Tbspcornflour
½ tspwhite pepper
½ tspMSG

Instructions
Marinate the beef
Step 1

Add the sliced beef to a bowl with the light soy sauce, dark soy sauce, oyster sauce, cornflour, garlic and ginger. Mix thoroughly until every piece is coated. Leave to marinate for at least 20 minutes, or overnight for even more flavour.
Make the sauce
Step 2

Mix together the beef stock, brown sugar, oyster sauce, light soy sauce, dark soy sauce, cornflour, white pepper and MSG. Stir until smooth and set aside.
Cook the rice
Step 3

While the beef is marinating, cook your basmati rice according to the packet instructions and keep warm.
Sear the beef
Step 4

Heat oil in a wok or large frying pan over high heat. Once the pan is really hot, add the beef and stir-fry until browned. It doesn’t need to be completely finished at this stage because it’s going back into the wok. Remove and set aside.
Cook the broccoli
Step 5

Add the washed and chopped broccoli to the same wok. Stir-fry until it becomes bright green and slightly tender, but don’t overcook it — we still want a little crunch.
Add the beef back
Step 6

Return the beef to the wok and stir-fry with the broccoli for a few more minutes, allowing some of the beef to get nicely browned around the edges.
Add the sauce
Step 7

Give your sauce mixture another stir, then pour it into the wok. Toss everything together and cook until the sauce thickens and coats the beef and broccoli.
Serve
Step 8
Spoon over your fluffy basmati rice, pour over some of that extra sauce and serve hot.
