Fibre Full Fudgy Black Bean & Sweet Potato Brownies
Soft, sweet, chocolatey brownies made with black beans, sweet potato and flaxseed for extra fibre and protein. Kid-friendly, fudgy squares perfect for lunchboxes. Keeps 3-4 days in airtight container in the fridge or 2 months in the freezer.

Instructions
Step 1
Preheat oven to 180°C and line a small 8×8 baking tin.
Step 2
Add the black beans, sweet potato, eggs, maple syrup, vanilla, cacao powder and salt to a blender or food processor.
Step 3
Blend until completely smooth and thick, with no bean bits visible.
Step 4
Add the flour and flaxseed, then blend again until combined. If using oat flour, let batter sit for 5-10 minutes afterwards.
Step 5
Fold through 1/2 cup chocolate chips.
Step 6
Spread into the prepared tin and smooth the top. Sprinkle with extra chocolate chips.
Step 7
Bake for 24–26 minutes, until just set. A skewer should come out clean.
Step 8
Cool completely before slicing into squares and enjoy.
