Madagascar Zucchini Skillet
A quick zucchini skillet that tastes like bruschetta without the bread. Boiled zucchini strips are sautéed with tomatoes, garlic, and bay, then rested and served over rice.

Instructions
Step 1
Cut zucchini into long, 1-inch wide strips and boil for two minutes.
Step 2
Transfer to skillet and saute briefly in oil.
Step 3
When zucchini is lightly browned, add remaining ingredients.
Step 4
Cook briefly and stir gently so that the zucchini strips don't fall apart.
Step 5
Turn off heat and let rest at least 30 minutes to absorb flavor. Reheat if needed.
Step 6
Remove bay leaves and garlic cloves and serve with rice.
