Crispy, golden king prawns tossed with fresh chillies, garlic, onion and spring onion for the perfect mix of crunch, spice and savoury flavour. The prawns are seasoned, coated in cornflour and fried until beautifully crisp before being tossed through fragrant aromatics. A takeaway-style favourite that’s dangerously easy to make at home. I do not measure as i cook so these are very rough estimates please season as you want.

SEASON PRAWNS

Add the prawns to a bowl with the MSG, salt, light soy sauce, garlic powder, Chinese five spice and white pepper. Pour in the egg white and mix thoroughly so every prawn is coated. This helps create that light, crispy exterior. Mix until everything is evenly coated.

COAT IN CORNFLOUR

Place the cornflour into a separate bowl. Coat each prawn generously, pressing the cornflour onto the surface, then transfer to a clean plate.

REST PRAWNS

Step 4
Leave the coated prawns to rest for at least 10 minutes before frying. This helps the coating stick and gives you an extra-crispy finish.

Step 5
Don’t skip that 10-minute rest after coating the prawns! It helps the cornflour hydrate slightly and cling to the prawns, giving you those gorgeous crunchy little pieces instead of the coating falling straight off in the oil.

FRY THE PRAWNS

Heat vegetable oil in a frying pan. You can shallow-fry or deep-fry them. Start at a moderate heat so the prawns cook through without the coating browning too quickly, then increase the heat slightly towards the end for colour.
