Mixed Berry Jam

Makes 3-4 cups of jam. You can used a frozen mixed berries or get fresh berries, so long as you have a total of 5 cups of berries.

Instructions

Step 1
In a saucepan on medium-high heat, dump all the berries and cook until soft.
Step 2
As the berries heat up, mash berries with spatula or potato masher until you get desired consistency.
Step 3
If you don't want raspberries seeds in your jam, take the jam off the heat after you finish mashing and press the berry mix through a sieve. Return the berry mixture to the saucepan on medium-low heat. If you don't mind the seeds, skip this step and go to step 4.
Step 4
Turn down the heat to medium-low and add in the sugar, pectin, thyme, and salt. Stir until sugar, pectin, and salt are fully dissolved.
Step 5
Turn off the heat and add in lemon juice, vinegar, and zest.
Step 6
Adjust seasoning to taste (salt, thyme, lemon juice, vinegar, and/or zest).
Step 7
Allow to cool before serving.
