Greek Yogurt Mini Muffins
Moist, kid-friendly mini muffins made with Greek yogurt and sweetened with maple syrup. Customize with chocolate chips, sprinkles, fruit, or nuts; great for meal prep.

Instructions
Step 1
In a bowl, whisk together the flour, salt, baking soda, and baking powder.
Step 2
In a separate bowl, whisk together the Greek yogurt, maple syrup, eggs, vanilla, and oil.
Step 3
Add the dry ingredients to the wet, and mix together until combined. Add toppings of choice and stir to combine.
Step 4
Use a mini muffin pan and spray with cooking oil spray (avocado, coconut, etc.) and divide batter using a tablespoon portion.
Step 5
Bake the muffins at 350°F for 15–18 minutes.
Step 6
Store in the fridge for up to a week.
