500gground lamb
0.5white onion
grated or finely diced
3 Tbspparsley
finely chopped
1 tsponion powder
1 tspsweet paprika
2 tspcumin
2 tspground coriander
1 tspchili flakes
black pepper

0.5 ozfresh parsley leaves
with some stem
1 tspsmoked paprika
½ tspground cumin
½ tspAleppo-style pepper
1 tspground cinnamon
½ tspcayenne pepper
½ tspsalt
4 Tbsptomato paste
For the salad
3persian cucumbers
finely diced, any cucumber will do
2tomatoes

1watermelon radish
or a handful of regular, diced
0.5red onion
diced
¼ cupfresh dill
finely chopped
¼ cupfresh parsley
finely chopped
1lemon juiced
¼ cupolive oil

For the yoghurt
¾ cupgreek yogurt
1garlic clove
large, grated
1lemon juiced
salt
black pepper
freshly cracked
pomegranate molasses

sumac

Instructions
Step 1
Prepare the meat mixture. In the large bowl of a food processor, fitted with blade, add onion garlic, and parsley. Pulse a few times to chop. To the mixture, add ground lamb (or beef). Season with spices and salt. Add tomato paste. Now pulse again until well-combined (about 8 to 10 pulses.)
Step 2
heat the largest heavy bottomed skillet you have over medium high heat with just a smidge of oil until hot. then, place the tortillas, meat side down, cooking for 5-7 minutes or until deeply browned. I like using a grill press to press them down while they cook for optimal browning, but you can also use a spatula to press them.
Step 3
once golden, flip and cook on the other side for a few minutes until lightly browned. remove and set on a wire rack (if making many, to minimize any sogginess) or a plate if having right away.
Step 4
Set out the four flatbreads and spread the meat evenly on each tortilla. there should be a nice even thin layer of meat on each, covering the entire surface of the flatbread. The meat will shrink once cooked so be sure to cover it all the way to the edge.
Step 5

to serve: spread a dollop of the yogurt/ creme fraiche mix, drizzle with pomegranate molasses and sprinkle with sumac and add the salad on top
