When it comes to vegan or vegetarian grilling, Trader Joe’s Portabella Mushrooms are unbeatable. Hearty and nutritious, Portabellas make an ideal meat substitute: they take on marinades and sauces spectacularly well, they’re the perfect shape and size for a plant-powered burger patty, and they even tend to take on a meat-like texture after a few minutes on the barbecue. And on top of all that, they’re super easy to work with: just a quick wipe with a wet paper towel, a slice or two here and there, and you’re ready to get cooking.
Our Portabella Mushrooms can be cut into quarters for veggie kebabs, stuffed with TJ’s Chevre for incredible appetizers, or sliced super thin and mixed with your favorite TJ’s BBQ sauce for a tasty, meat-free take on a pulled pork sandwich.

Instructions
Step 1
Heat a large sauté pan over high heat. Add a tablespoon of oil. Once hot, add sliced mushrooms and cook until they expel liquid then begin to brown, about 5 minutes. Season with salt.
Step 2
Add remaining oil and sliced onion. Cook for 3-5 minutes, until onions become soft.
Step 3
Reduce heat to medium and add barbecue sauce, stirring to combine. Sauté until sauce thickens slightly, 3-5 minutes.
Step 4
Add half of the pulled mushroom to the bottom half of each bun. Top with dressed coleslaw to serve.
