Step 1
1. Add the baby carrots and sliced onion to the bottom of the crockpot.

2. Place the chicken thighs on top of the vegetables.

3. Sprinkle the chicken with the black pepper and poultry seasoning.

4. Whisk together the cream of chicken soup, chicken broth, chicken gravy mix, and minced garlic.

5. Pour the mixture over the chicken and vegetables.

6. Prepare the stuffing mix according to the package directions using the recommended liquid amount.

7. Spread the prepared stuffing evenly over the chicken.

8. Cover and cook on LOW for 4 to 4½ hours, until the chicken reaches 165°F and is tender.

9. Fluff the stuffing gently with a fork before serving.
