Creamy Marry Me Chicken and Wild Rice Soup

1 lbboneless skinless chicken breast
sliced into thinner pieces
chicken seasoning

1 Tbspolive oil
1 Tbspoil
from a jar of sun-dried tomatoes
2 Tbspbutter
1onion
diced
2carrots
diced
2celery ribs
diced
7garlic cloves
minced
1 cupoil-packed sun-dried tomatoes
chopped
1 Tbsptomato paste
1 Tbspherbs de provence
¼ cupall-purpose flour
2 x 6 ozLong Grain & Wild Rice Recipe
boxes, Original, Original, including both seasoning packets
7 cupswater
2 cupsheavy cream
3 ozfresh Parmesan
2 cupsbaby spinach
chopped
salt

to taste
Instructions
Step 1
Slice chicken breast into thinner pieces and season with your favorite chicken seasoning.
Step 2
Heat olive oil and sun-dried tomato oil in a large pot over medium heat. Cook chicken 5–6 minutes per side, or until it reaches 165°F. Remove, let rest, then chop into bite-sized pieces.
Step 3
In the same pot, melt butter. Add onion, carrots, and celery and cook about 5 minutes.
Step 4
Add garlic and cook 1 minute more.
Step 5
Stir in sun-dried tomatoes, tomato paste, and herbs de Provence.
Step 6
Sprinkle in flour and cook 2–3 minutes.
Step 7
Stir in wild rice (including seasoning packets) and water. Bring to a boil, reduce to a simmer, cover, and cook about 22 minutes, stirring occasionally, until rice is tender.
Step 8
Stir in heavy cream, reduce heat to low, and add Parmesan. Stir until cheese melts.
Step 9
Add chopped chicken and spinach. Season with salt and pepper and simmer 2–3 minutes more.
