Instructions

Step 1
1 Preheat the oven to 375 degrees F.
Step 2
2 In a medium oven-safe baking dish (such as 9x9 inch square ceramic baking dish) add the orzo, sun dried tomatoes, dried oregano, and broth. Stir to combine.
Step 3
3 Add the Boursin to the mixture in the middle. Cover with foil.
Step 4
4 Bake for 25-30 minutes until the orzo is al dente and most of the liquid is absorbed.
Step 5
5 Stir to combine the melted Boursin and stir in the chopped spinach. Loosely cover with the foil, and bake for another 5 minutes until orzo is tender, and spinach is melted.
Step 6
6 Serve immediately and enjoy! (Note, the orzo will continue to soak up the sauce and thicken as it sits and cools).
Step 7
7 If you want to add cooked protein (such as chopped or shredded chicken or sliced, cooked chicken sausage), you can stir this in when you add the spinach.
