A recipe born not of inspiration, but of a fridge in crisis. There were plums that had to go. There was smoked tofu that had to go. Nobody asked for this pairing — least of all the plums — but sometimes the universe throws two odd ingredients together and calls it destiny. Step 1
1. Preheat the oven to 200°C (390°F) top/bottom heat. Place the plum halves cut-side up in a baking dish.

2. Combine smoked tofu, breadcrumbs, spring onions, miso paste, olive oil, soy sauce, and sesame oil in a bowl until crumbly and evenly moist. Season with salt.

3. Spread the mixture over the plum halves, pressing down lightly.

4. Bake 15 minutes until golden-brown and crisp, plums soft but holding shape.

5. Sprinkle with toasted sesame seeds and serve warm.
