Instructions

Step 1
Prepare the chicken.
Step 2
If necessary, pound the chicken breasts until they are very thin and evenly sized.

Make the flour mixture.
Step 4
Place the flour on a shallow dish. Mix in the salt, pepper, and granulated garlic or garlic powder.

Dredge the chicken.

Coat each piece of chicken lightly in the seasoned flour, shaking off any excess.

Brown the chicken.

Heat 2 tablespoons of butter and 2 tablespoons of olive oil in a large skillet over medium-high heat. Add the chicken and cook until golden brown on both sides and cooked through, about 3–4 minutes per side depending on thickness. Remove the chicken from the skillet and keep warm.

Make the sauce.

Reduce the heat to medium. Add 6–8 tablespoons of butter to the same skillet. Once melted, add the lemon juice, lemon zest, and capers.

Add the wine.

Pour in the white wine and allow it to simmer for a few minutes so some of the alcohol cooks off.

Choose your sauce consistency.

For a lighter, thinner sauce, add about ½ cup chicken broth and more as needed.

For a richer, thicker, creamier sauce, add ¼–½ cup heavy cream along with a little chicken broth.

Stir constantly as the sauce comes together. Allow it to gently simmer until it reaches your desired consistency.

Return the chicken to the pan.

Add the chicken back to the skillet, spooning the sauce over each piece. Let it warm through for a couple of minutes.

Finish and serve.

Sprinkle generously with fresh chopped parsley and serve immediately.
