Instructions

Step 1
1. Roast the Sweet Potato

Preheat your oven to 200°C.

Place the cubed sweet potatoes on a baking tray. Add olive oil, smoked paprika, cumin, salt and black pepper. Toss until evenly coated.

Roast for approximately 20–25 minutes, turning halfway through, until golden and tender.

2. Prepare the Vegetables

While the sweet potatoes are roasting, heat a frying pan over medium heat. Add the capsicum and red onion and cook for 3–4 minutes until slightly softened.

Add the corn and black beans and cook for another 2 minutes.

3. Warm the Chicken

Slice the BBQ roasted chicken breast into bite-sized pieces. Add it to the pan with the vegetables and gently heat for 2–3 minutes.

Avoid overcooking so the chicken remains tender.

4. Assemble the Bowls

Divide the roasted sweet potato between four serving bowls.

Add the warm chicken and vegetable mixture, followed by shredded lettuce.

Sprinkle grated cheddar cheese over the top.

Drizzle each bowl with barbecue sauce and add a spoonful of sour cream.

Finish with fresh coriander and an extra sprinkle of black pepper.

Serve immediately while the sweet potatoes and chicken are warm.

You can easily customise these bowls with whatever vegetables you have available. Avocado, cucumber, tomatoes, spinach or roasted broccoli are all good additions.

For extra heat, add sliced jalapeños or a little chilli sauce. If you prefer a lighter dressing, replace the sour cream with Greek yoghurt.
