Roux Mac and Cheese

Instructions

Step 1
Cook and drain pasta. Should be slightly undercooked from the box directions. Start your roux with the butter and flour. Stir and let it begin to just brown.
Step 2
Set cooked pasta aside, with your roux browned slowly add your milk and mix vigorously as you go. Add in your seasoning and mustard and let your roux cook as you continue to stir occasionally for around 10 minutes.
Step 3
Remove roux from heat or turn to a very low heat and begin to slowly add 4oz each of cheddar and Colby jack. Once mixed and smooth add all of the Gouda and Swiss cheese and mix until smooth.
Step 4
Add your pasta to your cheese sauce and once mixed pour it all into a large baking dish. Top with remaining 4oz of your Cheddar and 4oz Colby Jack. Bake at 350 for around 20 minutes or until bubbly and the top is browned to your liking.
