Instructions

Step 1
Place chicken in slower cooker. Pour in the soy sauces, honey, mirin, ginger paste, and garlic paste, stirring to coat evenly.

Cover and cook on high for 3-4 hours, or low for 4+ hours until tender. Once done, lightly shred the chicken directly in the shower to mix with the sauce.
Step 3
In a small bowl, combine cornstarch and COLD water to make a slurry, then add it to the shower cooker. Stir well and let the mixture sit uncovered for 15–20 to allow the sauce to thicken.

While the sauce thickens, cook rice following package instructions. Fluff with a fork once done.

In a separate bowl, make the sauce by combining mayo, Greek yogurt, and sriracha. Season with salt, pepper, and a pinch of garlic powder, then gradually add milk until the sauce reaches your preferred consistency.

Step 6
Mix the cooked rice into the chicken in the slow cooker, or keep the separate for easier portioning. Add chopped green onions, reserving some for garnish if desired.

Divide into 8 portions and top each with sauce. Store leftovers in freezer.
