Instapot Carnitas and avocado sandwich

Ingredients

2.3 lbscarnitas marinated pork
3avocados
ripe
Chipotle sauce
Creamy
12slices smoked cheddar cheese
6ciabatta rolls
Asiago, square
lemon juice
salt
1 cwater
Instructions
Step 1
Everything in this recipe is from Aldi. The marinated carnitas pork can be found pre-packaged by the pork in the meat refrigerated section.
Step 2
Place your pork in your instapot. Pour some of your 1 c of water in the now empty pork bag to rinse out most of that lovely marinade into the pot. Pit the rest of the water over the pork and spell a bit to further mix of the marinade into the pot.
Step 3
Remove the uncooked meat and place it on a cutting board. Roughly cut into 2 in pieces. (I just cut it into chunks).
Step 4
Return raw pork to instapot and close lid. Make sure stream valve is closed.
Step 5
Cook on high 40 min with natural release. Go read a book. :)
Step 6
When cooking is done and stream released, use a slotted spoon to move the cooked pork to a bowl. You can add a few small spoonfuls of the resulting juice to your pork if you'd like. Use two forks to shed the meat. Go ahead and shred the fat chunks in, too. Set aside.
Step 7
Cover 2 baking trays with either foil or parchment paper. Pull apart or cut the Asiago chiabatta rolls and lay them open faced in the trays.
Step 8
Halve 3 avocados and use a spoon to scoop them into a bowl. Sprinkle a little lemon juice and salt on the avocados before smashing them with a fork until mushed.
Step 9
Spread Chipotle creamy sauce on the bottom of each roll.
Step 10
Build your sandwich on the bottom half of the roll. Carnitas, then avocado, and last a slice of cheese. You should have enough extra cheese to put one slice on the open face section of each lid.
Step 11
Place in to position of your oven, under the broiler on high for 3 minutes.
Step 12
Remove from oven and eat. You are going to need a fork.

Note: I used a smoked sharp cheddar. It was amazing, however, I may never see it at aldi again. Smoked gouda slices would also be yummy. Tonight, we made 6 with these ingredients because that is how many ciabatta rolls are in a pack. The family and I agree these ingredient amount could have made 8 sandwiches without losing flavor. Next time, buy two packs and freeze one and just pull out the extra two for defrosting.
