Pineapple Chicken Teriyaki

Sweet, sticky, savory and packed with flavor!
Today we’re making Pineapple Chicken Teriyaki an easy dinner that’s perfect for a busy weeknight but tastes like you put in WAY more work than you actually did!
Tender chicken, juicy pineapple, vegetables, garlic, ginger and a delicious teriyaki glaze come together for a meal that’s absolutely loaded with flavor.
Serve it over white rice, fried rice, noodles or your favorite vegetables.

Ingredients
6 servings
1.5 lbchicken breast
cubed
½ cupPineapple chunks
½ cupBroccoli
optional
¼ cupRed bell pepper
diced or sliced
3 stalksGreen onions
sliced, whites and greens separated
2 clovesGarlic
diced
1 inchFresh ginger
diced
2 Tbspsoy sauce
2 TbspCornstarch
⅛ tspWhite pepper
⅓ cupSoy sauce
2 Tbsprice vinegar
1 Tbspcornstarch
1 Tbspsesame oil
4 Tbsppineapple juice
Instructions
Step 1

Cut chicken into bite-sized pieces.
Step 2

Season lightly with pepper, soy sauce and cornstarch.
Step 3
Mix teriyaki sauce together and set aside.
Step 4
Heat oil in a large skillet over medium-high heat.
Step 5

Add chicken, cook until browned and cooked through. Set aside.
Step 6

Add bell peppers and pineapple chucks sauté until slightly tender. Set aside with chicken.
Step 7

Add garlic and ginger and cook for about 30 seconds.
Step 8

Add everything back in and pour in teriyaki sauce.
Step 9

Stir everything together. Add broccoli.
Step 10

Reduce heat and simmer until the sauce thickens and coats the chicken.
Step 11

11. Garnish with green onions and sesame seeds.
Step 12
12. Serve over rice and enjoy!
