Chocolate Chip Brownie Bites

8 steps
Prep:15minCook:20min
These single-serving brownie bites are incredibly dense, fudgy, and rich. They feature a shiny, paper-thin crunchy top crust that yields to a gooey chocolate chip center. They use whole wheat flour and are naturally sweetened with a blend of honey and brown sugar.

Instructions

Step 1
1. Prep the Tin Preheat your oven to 325°F (160°C). Cut strips or squares of parchment paper to line your cupcake tin cups (or use parchment baking cups).
Step 2
2. The Crunchy-Top Secret Step In a large bowl, combine the 3 eggs, ⅓ cup honey, and ⅓ cup brown sugar. Whisk them together vigorously by hand for a full 2 minutes until the mixture is pale, frothy, and slightly thickened.
Step 3
3. Dissolve the Sugars Slowly stream the ¾ cup of warm melted butter into the egg mixture while whisking continuously. Whisking the warm butter into the sugars completely dissolves the sugar crystals, which creates the glossy, brittle crust on top
Step 4
4. Add the Cocoa Add the ¾ cup of cocoa powder and ⅓ teaspoon of salt. Whisk gently until the batter becomes smooth, thick, and dark chocolate in color.
Step 5
5. Fold in the Flour Add the ½ cup of whole wheat flour. Switch to a spatula or spoon and gently fold just until the white streaks of flour disappear. Do not overmix, or the brownies will become tough and cake-like.
Step 6
6. Stir in the Chips Gently fold in the ⅓ cup of chocolate chips until evenly distributed. The batter will be very thick and glossy.
Step 7
7. Bake Divide the thick batter evenly among the lined cupcake cups. Bake at 325°F (160°C) for 12 to 15 minutes. Check at the 12-minute mark: the tops should have a dry, shiny crust. A toothpick inserted into the center should come out with a few moist crumbs, but no wet, liquid batter.
Step 8
8. Cool and Release (Crucial) Let the brownie bites cool completely in the tin at room temperature for 45 minutes, then place the entire tin in the fridge for 30 to 60 minutes. Once completely chilled and firm, lift them out and gently peel the parchment paper away from the sides.
