Instructions
Step 1
Preheat the Oven: Set your oven to 425°F (220°C) (or 400°F if adding chicken). Lightly grease a 9x13-inch or medium-large baking dish.
Step 2
2. Combine Base Ingredients: Add the dry orzo, minced garlic, olive oil, lemon zest, salt, and pepper directly into the baking dish. If using sun-dried tomatoes or artichokes, stir them in now.
Step 3
3. Add the Cream Cheese & Broth: Place the block or chunks of cream cheese right in the center of the dish. Pour the hot chicken or vegetable broth all around the orzo. Do not stir yet.
Step 4
4. First Bake (Covered): Cover the baking dish tightly with aluminum foil. Bake for 20 to 25 minutes, until the broth is mostly absorbed and the orzo is tender.
Step 5
5. Stir & Melt the Cheese: Remove the foil. Use a spoon to vigorously stir the softened cream cheese into the hot orzo and remaining liquid until a smooth, creamy sauce forms.
Step 6
6. Add Spinach & Lemon: Stir in the fresh baby spinach, Parmesan cheese, and fresh lemon juice.
Step 7
The spinach will wilt quickly from the residual heat of the pasta.
Step 8
7. Finish & Serve: Taste and adjust with extra salt, pepper, or a squeeze of lemon juice if needed. Serve warm.
