Ingredients
6 servings
1 lbpork sausage
cooked crumbled and drained
8eggs
large, lightly beaten
¼ cmilk
I did 1 c and it worked
1 cshredded cheese
Cheddar or mozzarella was suggested I used Colby Jack
1 tspsalt
¼ tsppepper
1 Tbspbutter
or olive oil
½ cgreen onion
Thinly sliced
½ csweet red pepper
diced
1 cmushrooms
thinly sliced
1 chash browns
southern style, frozen
½ cparmesan cheese
Instructions
Step 1
Preheat oven to 350°.
Step 2
In a large mixing bowl, combine eggs, milk, cheese, salt and pepper; set aside.
Step 3
Heat olive oil or butter in a large skillet; sauté onions, and any other vegetables desired until tender.
Step 4
Add vegetables and cooked sausage to egg mixture; stir well.
Step 5
Place 12 foil baking cups into cupcake pan.
Step 6
Distribute sausage and egg mixture evenly into baking cups.
Step 7
Bake for 22 minutes or until eggs are set.
Step 8
Remove from oven. Sprinkle with Parmesan cheese and serve.
