Ingredients

12 ouncestortellini
fresh or frozen
1 ½ cupsheavy cream
2 tablespoonsall purpose flour
1 tablespoonolive oil
3cloves garlic
minced
1 x 14.5 ozcan petite diced tomatoes
3 cupsspinach
roughly chopped
2 tspdried basil
1 teaspoonoregano
½ tspthyme
¼ tspcrushed red pepper flakes
optional
salt
to taste
pepper
to taste
¼ cupgrated parmesan cheese
Instructions
Step 1
In large pot of boiling water cook tortellini according to instructions. Drain well.
Step 2
In a small bowl, whisk together heavy cream and flour; set aside
Step 3
Heat olive oil in a large skillet over medium high heat. Add garlic, and cook stirring frequently until fragrant, 1 minute.
Step 4
Stir in tomatoes, spinach, basil, oregano, thyme, red pepper flakes, and salt/pepper. Cook stirring occasionally until spinach starts to wilt, about 2 minutes.
Step 5
Gradually whisk in heavy cream mixture and parmesan. Cook stirring constantly until slightly thickened, about 3-4 minutes. Stir in tortellini and gently toss to combine.
Step 6
Top with additional grated parmesan as desired and serve immediately.
