Instructions

Making the stock

Pour 750ml of boiling water in to a jug, add 1 fish stock pot and 1 white wine stock pot then stir to dissolve. Add the garlic, chilli and parsley then set aside.

Heat 1 Tbsp vegetable oil in a large frying pan or pot. Add in 300g of risotto or long grain rice. Stir the rice for 2 minutes to warm it through.

Once the rice has warmed through pour in the stock. Bring to the boil then reduce to a simmer. Continue to stir regularly to prevent the rice catching on the bottom of the pan. Add more water if you need to, cook until the rice has absorbed the stock and is soft to the bite.

Once the rice is soft to the bite add in the defrosted and drained seafood. Mix well into the rice and cook on for about 2 minutes until the seafood has heated through.

Step 5
We always eat this with some garlic flat bread or a baguette. You could add a side salad or a suitable vegetable. It really does give you a taste of the sea.
