Beef Chilli or Beef Chilli Burritos

Quick Beef Chili or Chilli Beef Burtitos - 2 portions of the meat & sauce. Can be eaten as straight chilli too just serve with the microwave rice only.

Ingredients
2 servings
250gbeef mince
5% fat is healthier
1 teaspoonoil
0.5red onion
chopped
0.5pepper
chopped
1 teaspoongarlic purée
1 teaspoonmild chilli powder
½ teaspoonpaprika
½ tspground cumin
0.5beef stock pot
or stock cube
215gred kidney beans
tin of
0.5 tinchopped tomatoes
or you can buy small tins
ketchup
2wraps
per portion
1 Packmicrowave rice
Golden Veg or Mexican are good but plain basmati works too
1 potSour cream & chive dip
Instructions
Step 1
Prep - Chop onion and pepper and drain and rinse the kidney beans.
Step 2
Put your saucepan on the hob over a medium heat. Heat the oil - leave it for 1-2 minutes until hot.
Step 3
Add the onion and cook, stirring fairly frequently, for about 5 minutes, or until the onion is soft, squidgy and slightly translucent.
Step 4
Add the garlic puree, red pepper and spices. Give it a good stir, then leave it to cook for another 5 minutes, stirring occasionally.
Step 5
Add the mince and sizzle for 5 mins, stirring, until browned. Stir in the tomatoes, half beef stock pot & ketchup, stir well.
Step 6
Simmer for 5 mins then tip in the beans. Season, stir and simmer everything for 20 mins until the beef is in a thick gravy.
Step 7
To make the burritos, heat the tortillas and microwave rice, following the pack instructions.
Step 8
Dollop the sour cream and chive dip on the wrap them add some rice and beef sauce along each tortilla. Dont overfill, fold over the ends and roll up to seal.
Step 9
Leftovers are perfect for chilli the next day, great on a baked potato or any left over rice but Don't EVER reheat rice especially the microwave ones, serve that cold and just reheat the mince and sauce in a saucepan till properly hot through and pop on top.
