Who doesn't love crispy chicken! I'm always looking for healthier alternatives and this crispy air fryer chicken taco salad is a great solution. Best part is it is really easy to make because all you have to do is chop a few things up and toss it all together. The crispy chicken with the extra crunch of tortilla chips, along with all the extras thrown in, this salad will keep you full and hit all those flavor notes!

Preheat air fryer to 400 degrees

Season your chicken thighs with 1 tbsp olive oil and 1/4 tsp of both salt and pepper.

Step 3
Air fry at 400 degrees for 20-25 until cooked through (165 degrees). Flip halway.
Step 4
Combine lime juice, vinegar and 1/2 teaspoon each salt and pepper in a large bowl; whisk in oil. Add tomatoes, zucchini, avocado, and onion, if using; gently toss to coat. Set aside.

Once chicken is cooked, cut into bite size pieces and add to the tomato mixture. Toss in your corn; stir in the arugula, tortilla chips and cilantro and gently toss to combine.

Serve in a salad bowl. Top with a few more tortilla chips, cilantro and cotija cheese. Enjoy!
