Instructions

Step 1
Cut the cucumber, red bell pepper, green onion, and carrot into julienne slices.
Step 2
Optional: mix the shredded chicken with chilli sauce
Step 3
Fill a large shallow bowl with warm water. Take one rice wrapper at a quickly dip it into the warm water and shake off.
Step 4
Place some cucumbers, red bell peppers, green onion, and carrots in the center of the rice wrapper into a log shape. Top with 2 mint leaves, and 2-3 tablespoons of chicken.
Step 5
Roll the wrapper up tightly from the bottom to about half way through. Fold over the left and right sides inward and continue to tightly roll the wrapper.
Step 6
Mix the hoisin sauce, peanut butter, lime juice, honey, and water together for the dipping sauce.
