Instructions
Step 1
Heat a heavy pot large enough to hold clams on high heat until hot and add peanut oil. Heat, swirling, until very hot but not smoking. Add the garlic, onions and red pepper flakes, stir for about 15 seconds.
Step 2
Standing back from the pot, add the wine mixture, cover, and bring to a boil. Add the clams, cover and return liquid to a boil. Immediately, reduce the heat medium and cook until the clams have just opened, 7 to 8 minutes, shaking the pot 3 or 4 times to ensure the clams cook evenly.
Step 3
Add the basil and stir it thoroughly into the liquid. Cover and cook for 30 to 45 seconds. Add the fish sauce and stir thoroughly.
Step 4
The clam can be served over noodles if desired.
