Instructions
Step 1
Put fish in a non-metallic bowl and sprinkle the lime juice over it. Toss lightly, then cover and chill while you make the crust.
Step 2
Spray oil into medium Not stick pan and fry the chorizo over a medium heat for 1-2 minutes or until the fat begins to run.

Tear the bread, add to the pan and cook for 3 minutes until stained all over.

Tip onto plate and cool for 10 minutes

Preheat oven to fan 180 Celsius

Blitz bread and chorizo in food processor

Add garlic, lime zest, parsley, parmesan, salt and freshly ground black pepper and blitz again until thoroughly combined

Spray oil onto baking tray and put fish skin side down on the tray, with marinating juices
Step 9
Spook on the chorizo crumb, pressing on it firmly
Step 10
Bake for 15-18 minutes until the fish is cooked and crust is crisp
