Cóctel De Camarón 🦐
One of my mother’s favorite dishes!
This cóctel de camarón is spicy and super refreshing.
Pair it with some saltines and this will have you feeling as if you were clock in that PTO on the beachside.

Ingredients

2 lbshrimp
medium, cleaned and deveined
1 ¼ cupspicy ketchup
1 cupClamato
spicy
1 cupspicy Tomato juice
2.5cucumbers
diced
3serranos
diced
2tomatoes
seeded and diced
½ cupyellow onion
finely chopped
½ cupcilantro
chopped
3avocados
small, diced
½ cuplime juice
2 Tbsphot sauce
2 tspgarlic powder
2 tsponion powder
salt
to taste
black pepper
to taste
Instructions
Step 1
Boil shrimp with some Old Bay until shrimp turns pink. About 5 minutes.
Step 2
Drain shrimp and place in an ice bath while you prepare your sauce.
Step 3
Mix in everything along with your juices in a bowl.
Step 4
Once the sauce is incorporated with your veggies, mix in your drained shrimp.
Step 5
Place shrimp mixture in the fridge for an hour to allow the flavors to marinate.
Step 6
Serve in a cocktail glass, top with extra avocado and cilantro.
Step 7
Serve with saltine crackers.
