Marinade for Chicken
1.5 lbsBoneless Chicken Thighs
cut into 2 inch pieces
4cloves of garlic
2 StemsCelery
0.5Habanero Pepper
1 ½ tspGinger paste
2 TbspCassareep
1 Tbspmushroom sauce
salt
to taste
black pepper
to taste
For the Macaroni
Instructions
Step 1
Prepare the marinade for the chicken: Grind the 4 cloves of garlic, 2 stems of celery and half of a habanero pepper together.
Step 2
Season the chicken with the prepared marinade, 1.5 tsp of ginger paste, 2 tbsp of cassareep, 1 tbsp of mushroom sauce, salt and black pepper.
Step 3
Marinate the chicken for at least 2 hours (overnight is better).
Step 4
Cook noddles according to package directions in salted water. Strain.
Step 5
While the noddles are cooking, add oil to a large-bottomed pan, add sliced onions and cook for 3-4 minutes.
Step 6
Add chicken to pan and cook. When chicken is almost done, add bell peppers, jalapeño and serrano peppers.
Step 7
Add drained noodles to the pan with the chicken and veggies. Add 2 tbsp of mushroom sauce. Stir to combine all ingredients.
Step 8
Garnish with sliced scallions. Serve and Enjoy!
