Steak Fajita Egg Rolls

Instructions

Step 1
In a pan- melt butter and add your sliced peppers, onions and salt. Cover lid and cook on medium low heat until veggies soften. Take off lid and continue cooking and stirring occasionally until veggies reduce by half and are caramelized.
Step 2
In a bowl mix together steak seasonings- add your steak let marinate for 10-15 minutes.
Step 3
In another pan- heat olive oil over medium high heat and sear your steak for 1-2 min each side until just cooked. Let cool. Once cooled, slice super thin and add to pepper mixture.
Step 4
Turn pepper and steak mixture heat off and mix in shredded cheese and set aside to cool.
Step 5
Using a rolling pin- roll out each empanada round slightly to form a larger circle.
Step 6
Add vegetable oil to a frying pan over medium high heat. Place a toothpick in the center- if the oil bubbles, it’s ready for frying.
Step 7
While oil is heating- assemble your egg rolls. In the center of each empanada round place a thin slice of colby jack cheese, then top with a scoop steak and pepper mixture(don’t add too much or your egg rolls won’t close). Fold in each of the sides then roll into a log and seal edges with water.
Step 8
Fry egg rolls for 3-5 minutes on each side or until they are golden brown and crispy all around.
Step 9
Serve with guacamole and enjoy!
