Instructions
Step 1
Thinly slice onion and poblano. Set aside. Set oven to 425F.
Step 2
Butterfly chicken breasts - cut them through the middle (long ways) and pound lightly between Saran Wrap until thin. Season with salt.
Step 3
Stuff each chicken breast with 2 tablespoons of cream cheese, half of the chopped chilis and a small handful of the poblanos (depending on the size of your chicken breasts).
Step 4
Sear both sides of the chicken in some olive oil in an oven safe pan. Then add the remainder of the poblanos and sliced onion into the pan and surrounding the chicken.
Step 5
Pour in entire jar of salsa verde of your choice.
Step 6
Bake at 425F for about 8 minutes, then broil on high until top of dish begins to brown (about 2-3 minutes).
Step 7
Garnish with cilantro and lime slices to taste.
