Black Bean Clams with Two Noodles

Ingredients
4 servings

3 tablespoonscornstarch

3 tablespoonswater

2 tablespoonsreduced sodium soy sauce

2 teaspoonssesame oil

1 teaspoonsugar

2 tablespoonspeanut oil
divided

6 cupszucchini noodles

1 x 14 ozstir fry noodles

2scallions
trimmed and cut into one inch pieces

1Hot Chili pepper
small, sliced

2 tablespoonsminced garlic

2 tablespoonsfresh ginger
minced

1 ½ tablespoonsblack beans
fermented, or black bean garlic sauce
5 poundsneck clams
little, or other small, scrubbed

3 tablespoonsrice wine
or dry sherry

fresh cilantro
chopped, optional for serving
Instructions
Step 1
1. Whisk cornstarch and water in a small bowl until smooth
Step 2
2. Mix in soy sauce, sesame oil and sugar. Set near the stove
Step 3
3. heat one tablespoon peanut oil in walk over medium high heat. Add squash and stir fry noodles, cook, stirring gently until just tender, two to three minutes and transfer to a serving dish
Step 4
4. At the remaining one tablespoon peanut oil, scallions, chili, garlic, ginger and black beans to this pan. Cook, stirring constantly until fragrant, about 30 seconds
Step 5
5. Add clams and rice wine or Sherry. Cover, reduce heat to medium and cook, stirring occasionally until the clams are open, 7 to 10 minutes and discard any unopened clams
Step 6
6. Use slotted spoon to transfer the clams on top of the noodles
Step 7
7. Whisk the cornstarch mixture and add to the pan. Cook, stirring until the sauce is thickened, one to two minutes. Drizzle the sauce over the clams and noodles and top with cilantro
