Instructions

Step 1
Prepare bowl of ice water for later.
Step 2
Cut off the dark green tops of the leeks. Don't cut off the root end which will help hold the leeks together while cooking. Slice each leek in half and rinse thoroughly to clean.
Step 3
Bring large pot of water to a boil over high heat and drop leeks in. Let them soak until softened, about 5min.
Step 4
Remove from pot and place in bowl of ice water to stop them from cooking.
Step 5
In wide frying pan, heat the olive oil over medium-high heat. Place leeks cut-side down and cook for several minutes until starting to brown. Transfer to serving plate and sprinkle with Parmesan and salt and pepper.
