Ingredients

1kgveal steaks
8Swiss cheese slices
45gSpinach leaves
0.5red capsicum
cut into strips
1 tablespoonolive oil
1 Tbspbutter
unsalted
1onion

300gmushrooms
sliced
2 Tbspplain flour
1 Tbspgravy powder
2 cupsvegetable stock
2 sprigsfresh thyme
1 cupthickened cream
salt

Instructions
Step 1
1. Place one thinly sliced veal on a flat surface. Top each with a few spinach leaves, one slice of swiss cheese & a strip of capsicum. Roll veal to enclose filling & secure with toothpicks or small skewers.
Step 2
2. Heat the oil in large fry pan. Cook the veal rolls, in batches, until browned all over. Remove from pan and set aside.
Step 3
3. To make the mushroom sauce, melt butter with oil in a large saucepan. Add diced onion and cook until translucent. Add the garlic.
Step 4
4. Add mushrooms & sauté for about 5 minutes. Add flour, gravy powder & fresh thyme. Stir for a minute to cook out flour taste.
Step 5
5. Slowly add stock. Stirring & waiting until it thickens before adding more. Add salt & pepper to taste. Once all stock has been added, add cream and reduce heat.
Step 6
6. Return the cheesy veal rolls to the mushroom sauce and allow to simmer with lid on stirring for a further 10 minutes.
Step 7
7. Serve warm with a side of mashed potato.
