Step 1
In a medium mixing bowl add ricotta, eggs, milk and zest. Which to combine. In a small size mixing bowl mix flour, baking powder and stevia. Add dry ingredients to wet ingredients. Add batter (3 inch diameter) to a pan heated to medium heat. Flip when lightly brown. These cook differently than regular pancakes and we be fluffy and creamy inside.
