Mushroom and Pea Risotto

A simple but warming one pan dish that can also be served as a side to chicken or fish. This dish also freezes well.

Instructions

Step 1
Add the olive oil to a deep frying pan or saucepan, and fry the mushrooms on a medium heat until browned
Step 2
Drain any excess liquid, and stir in the arborio rice. Toast the rice for 2-3 minutes, then add the peas to the pan
Step 3
Start adding the stock one ladle at a time, adding extra once the rice has absorbed the liquid. The final risotto should have a soft and thick consistency
Step 4
Stir in the coriander and serve
