No knead multigrain whole wheat bread

Dry yeast, no kneed bread. Cooked in dutch oven or PMDO. (Poor man's Dutch oven) If you do not have a dutch oven you can substitute 2 loaf pans, one acting as a lid, attached with 2 metal binder clips. Pre-heating is not necessary with this method. Remember to spray interior of bottom pan, and sides of toppanwithnon-stick spray.

Instructions
Step 1
Combining ingredients as ordered, at oats last, use handle of wood spoon to stir. "Around the outside into the middle" scrape sides, tumble to incorporate any loose ingredients.




Step 2
Cover with plastic wrap and proof overnight on kitchen counter.

Step 3
De-gas, pull, and stretch by stirring with wooden spoon handle. Scrape sides with spatula, for any remaining pieces.


Step 4
Sprinkle with three tablespoons rolled oats, as garnish. Roll dough ball around an oats.
Step 5
Roll dough ball into 8-in greased proofing skillet. Proof for 30 to 60 more minutes.

Step 6
Move oven rack to lower 1/3 of oven, preheat to 400 degrees F. Place Dutch oven in to preheat.

Step 7
Remove Dutch oven, turn over proofing skillet to dump dough into Dutch oven. Cover with lid and bake 40mins at 400° F.
Step 8
Remove lid bake for an additional 3 to 8 minutes to brown crust.
Step 9
Roll completed bread loaf onto cooling rack.
