Instructions
Step 1
Heat 2 tbsp olive oil in a large pan, cook salmon on both sides until golden but not cooked through.
Step 2
Remove salmon and set aside, add garlic, ginger, chilli and lemongrass and cook for 1-2 mins until softened.
Step 3
Add sugar and stir until it starts to caramelise.
Step 4
Add veg and cook on high heat for 1-2 mins.
Step 5
Pour in coconut milk, season well, stir in fish sauce and soy sauce.
Step 6
Place salmon back in, cover and simmer for 5-6 mins until cooked through.
Step 7
Add in lime juice and zest.
Step 8
Serve with jasmine rice and fresh coriander.
