Instructions
Step 1
Cook rice according to packet instructions.

Step 2
Heat a pan and add oil. Once the oil is heated, add the curry paste in a pan over medium heat for 1 minute or until fragrant. Add coconut milk and cold water. Bring to boil.




Step 3
Add chicken, zucchini, green beans, capsicum, hoisin sauce and lemon juice. Stir to combine. Bring to the boil. Reduce heat to medium-low. Simmer for 5 minutes or until chicken is cooked through and vegetables tender.






Step 4
To serve, divide rice into two serves and top with curry. Store leftovers in the fridge.
