Double Chocolate Banana Bread

As a proud chocolate lover, I think double chocolate banana bread is far superior to any other! This loaf is suuuper moist, tender and comes together fairly quickly. Grab your overripe bananas and let’s go!
Pro tip: if using glass or ceramic, drop the oven temperature to 325 and increase the bake time by 10-15 mins. But again, the thermometer will be your best way to gauge when it’s baked through.

Ingredients

¼ cupbutter
melted
2 Tbsvegetable oil
½ cupbrown sugar
½ cupgranulated sugar
2eggs
room temperature
3bananas
medium, over ripe and mashed
½ cup2% greek yogurt
1 tspvanilla extract
1 cupall-purpose flour
½ cupDutch-process cocoa
1 tspbaking soda
½ tspkosher salt
180gsemi sweet chocolate chips
plus more for sprinkling on top
Instructions
Step 1
1. Preheat your oven to 350 degrees and line a 9x5-inch metal loaf pan with parchment paper. Leave a bit of overhang so you can pull the baked loaf out more easily. Set aside.

2. In a large bowl, whisk together the melted butter, vegetable oil, both sugars and eggs till combined.

3. On a flat plate or cutting board, mash your bananas then add to the bowl along with the greek yogurt and vanilla. Mix till combined.
Step 4
4. Place a sieve over the bowl and pour the flour, cocoa powder, baking soda and salt into the sieve.
Step 5
5. Sift your dry ingredients into the wet ingredients and fold gently till almost combined.
Step 6
6. Add in your chocolate chips and gently fold again.
Step 7
7. Pour the batter into the prepared loaf pan and sprinkle more chocolate chips on top. I like to use mini chocolate chips for this.
Step 8
8. Bake for 60-75 minutes, or until the loaf is slightly domed and the internal temperature reads 200 degrees. A toothpick might not be a best indicator as the inside of the loaf is very moist and the chocolate chips will dirty the toothpick, so a thermometer is your best option.

9. Allow to cool in the pan on a cooling rack for 20 minutes before removing the loaf from the pan.

10. Allow to cool completely before cutting. The loaf may collapse a little as it cools which is totally fine.
